2025 Cooks with Collars
FANTASTIC FR. FRITTATAIngredients:
- Eggs
- Sour Cream (sub. Whole Milk or Cream)
- Butter
- Cheese of choice
- Fresh Vegetables (zucchini, tomato, sweet peppers, onion)
- Fresh Herbs (basil, parsley, thyme, chives)
- Hot peppers (optional)
Directions
- Preheat oven to 400°
- Chop/dice vegetables
- Saute vegetables over medium heat until soft
- Beat eggs, adding sour cream, whole milk and/or cream to make a runny and creamy consistency
- Butter the bottom and sides of the casserole dish you will be using
- Pour in a small amount of egg mixture to cover the bottom of the dish
- Add a layer of herbs and vegetables to the dish
- Cover with a layer of egg mixture. Repeat these steps until the dish is ¾ full
- Top with a layer of cheese and herbs to your liking
- Bake for about 45 minutes, until the middle is cooked through and lightly firm.
- Remove from the oven and let stand for 10 minutes
- Serve and enjoy!
