The train cake was my first attempt at cake decorating.  It was for my son’s 3rd birthday.  I learned about what works and doesn’t work – like cut pieces of cake get all crumbly when you try to put icing on them!  I believe the wheels were peppermints, raisins were for the coal car, peppermint sticks were the logs, and there is a picture of my son, the conductor, in the window of the engine.

​After discovering how difficult it was to make the train cake I took an introductory cake decorating class. We learned how to make the woven basket/flower cake.  As the finale we all had to enter a cake into a contest and have the night school kids vote for their favorite.  I’m not one who always follows tradition so I was creative and made the Coke, Hamburger and Fries cake as my entry. I won the contest! J

​The turkey cake needed to be large enough to serve a crowd of people for the 30th anniversary of an organization I belonged to.  It was huge and needed a lot of icing of different colors.  I don’t remember how long it took me but it was enough for me to cry “uncle” and that was the last cake I decorated!!!!

This is a cherry vanilla cake with cherry berry filling and vanilla frosting made for a co-worker's space themed baby shower. The topper is made with rice cereal treats, fondant, and spaghetti noodles.

A peacock cake I made for my friend's daughter. I loved the colours in this cake and it was fun to make. And I learned what the tufty bit on the peacock's head is called!

This cake is a chocolate cake with peppermint buttercream and chopped peppermint pieces. Personally I don't like peppermint but this cake was delicious! The stripes are free-hand with white chocolate ganache drips and edible glitter. Perfect holiday cake!"

This is the second time in my life I've made fondant. First time was 10 years ago! The houses around the base of the cake were inspired by the colorful architecture of Nahyvn Street in Copenhagen, where I lived for one year in college. The flavor is earl grey tea cake with a cream cheese frosting... you bet we ate it after we snapped the photo!
