I made this fondant covered popsicle chocolate sheet cake. The sprinkles and stick are also made out of fondant. As you can see, our dog Zeus "took" a bite. :) This was one of my audition entries for the Food Network show Kids Baking Championship.

I was inspired to render the Rady Children's Hospital logo because I wanted to honor the hospital and the wonderful healthcare team. It's been a year since I started my cancer and hormone deficiency treatment there, for which I have so much to be grateful for. 

 The cake is a Gluten-Free vanilla marbled cake with blue and white batter. Each of the individual pieces of the Rady kite is decorated with a dark teal buttercream, blue color spray, and blue and white sprinkles. After being diagnosed with a brain tumor that compromised my endocrine system, my doctor, recommended I change my diet to a nonfat, low carb diet. Since then all of my baked goods are gluten-free and are baked with alternative flours and sugars.

I'd first like to thank you very much for creating this contest. I have always dreamed of entering a baking competition and I am thrilled to be a part of this and use my time during social distancing to do what I love most! BAKE AND GIVE TO CHARITY! I baked and designed a cake in the shape of a globe wearing a mask and with my homemade donuts representing different countries around the world that have been greatly affected by Corona Virus. A lesson that I have learned from this recent situation is that we are ALL connected. And that one sneeze in China can effect people in all corners of the world.
